Chicken curry breast (boneless)

A quick curry of chicken or vegetables makes you so happy and you can also add the leftovers. Together with a nan or wrap, everyone at our house is very happy!


  • 2 tablespoon curry rub (tbsp) = 20 g
  • 400 g (vegetarian) chicken, meat, fish, vegetables, shrimp.
  • bsp oil 150 g tomato or 200 ml coconut milk
  • Salt and pepper to taste


  • Cut the chicken fillet or veggie chicken into pieces
  • Cut the onion and tomato into medium-fine pieces


  • Heat oil in the pan with onion and 2 tbsp curry rub
  • Stir-fry for 2 minutes and add the chicken fillet or chicken substitute.
  • Stir-fry for 3 minutes on medium heat.
  • Add the tomato cubes and close the pan.



  • Make extra sauce with more tomatoes
  • Boiled sweet potatoes or potatoes are also delicious in the dish.
  • Add chunks of green beans or frozen peas and boiled eggs for a one-pot dish
  • Stir in (frozen leaf) spinach or cooked lentils
