Fish in curry

Whole Fish in curry I can't believe I can rub a whole fish with the curry rub and some tomatoes in a baking dish and not have to do anything to it. The solution if you love fish like I do and can enjoy this festive dish at the end of a busy day.

Plan

  • 2 tbsp = 20 g curry rub from Sorgh & Hoop
  • fish of 400/500 grams like dorade, sea bass, trout or pieces of salmon
  • 2 tomatoes or 200 ml coconut milk
  • 2 tbsp oil
  • 1 small onion

Prep

  • Finely chop the tomato and onion.
  • Make sure the fish has no scales and wash well, possibly with vinegar, on the inside and outside.
  • Sprinkle the fish inside and out with oil and the curry rub. Rub it in nicely.
  • Place in an oven dish with onion and tomato or coconut milk

 

Pleasure

  • Preheat the oven to 200 degrees.
  • Place the oven dish in the oven for 15 minutes.
  • Turn the fish over and cook for another 15 minutes.
  • Pepper to taste.

Psstt

  • When working from home, I cover the dish with aluminum foil and cook the fish for 30 minutes at 200 degrees
  • Roast some eggplant slices and possibly shrimp with the fish in the oven.
  • Delicious with nan, wrap or rice chutney and stir fried veggie
